and now for something uplifting AND tasty

i was getting sick of the real depressing shit, so i decided to do something FUN!!! below are some great vegan recipes to share with family, friends, local food not bombs, etc. etc. etc. ENJOY!!!

corn bread (slightly changed from original from 'simply vegan' by debra wasserman; original said 1/3 maple syrup or molasses, but its really not enough to sweeten it up and make sure to use real maple syrup, its much better)

1 cup cornmeal
1 cup whole wheat flour
1 tablespoon baking powder (MIX WELL!!! NO GROSS CLUMPS!!!)
1/4 cup oil
1 cup soy/rice/almond milk
1 cup maple syrup

preheat oven to 375. mix everything in a big bowl. pour batter into lightly oiled 8 inch pan or cupcake dish.. bake for 20 mins. YUM!

pumpkin pie ( also from aformentioned book. also, instead of 1 egg or egg replacer in any recipe, you can use half of a banana whipped)

1 1/2 cups soy/rice/almond milk
2 tablespoons ener-g egg replacer (or bananas depending on ratio of ener-g egg replacer to real egg)
16 ounce can pureed pumpkin (with no added sugar)
1/2 maple syrup ( i always use more maple syrup with everything just because i like it so much, but try the recipe the way it is first to determine personal preference)
1 teaspoon cinnamon
1/2 teaspoon ginger
2 vegan pie crusts ( you have to look around, but if you live near one of the natural foods stores probably not hard to find, or just make your own dough)

preheat oven to 425, blend the milk replacer with the egg replacer together in a bowl with a wisk. add all the rest and mix very well.
pour into the 2 crusts. bake 20 mins at 425. remove pies from the oven and allow to cool before cutting it up and digging in.

wayne's tofu chili (from, you guessed it, 'simply vegan')

1 pound tofu, cubed into small pieces
2 tablspoons oil
2 onions, chopped
3 green peppers, chopped (i personally think that any bell pepper will do but wayne made some great chili none the less!)
28 ounce can crushed tomatoes
3 15 ounce cans of black-eyed peas, kidney, and white beans (one can for each), all drained
2 jalapeno peppers, minced
garlic and chili powder to taste

saute tofu in oil about 10 mins. add chopped onions and green peppers, and stir fry 5 mins longer. lower heat. add tomatoes, peas, beans, jalapenos, and spices simmer for approx. 12 mins. add tomatoe paste if sause is too thin. freeze to enjoy later or feast right now. GREAT SHIT!!!

oil pie crust ( from http://vegweb.com/recipes/sweets/5865.shtml)

2/3 cup whole wheat flour
2/3 cup all purpose flour
pinch of salt
1/3 cup oil
3 tablespoons cold vegan soy/rice/almond milk

in large bowl mix flours and salt. in seperate bowl mix milk replacer and oil. add oil-milk mixture to other bowl all at once and mix with hands into smooth ball. you might need to add 1-2 tablespoons water to make ball if mix is too dry. put ball in between 2 pieces of wax paper and use rolling pin to flaten out dough to 11'' diameter circle, closing any cracks with a drop of water or 2. put in pie pan and bake for 10-20 mins.

well thats it for now, but come to expect that when the depressing shit is all around, the yummy recipes will pop up to show that, no matter how bad things get, we can always share some good food with one another.
